Truth be told, I’m not sure there’s a “hard” version of key lime pie. Perhaps because I usually don’t do much baking, the ease of making this wowed me more than the average person. Regardless,when my husband brought a bunch of key limes home from his mom’s house last week (she and her sister have an amazing garden), I decided to give this pie a try. I love the mango key lime pies from Publix bakeries, and honestly, I don’t know what else you you’re supposed to do with key limes besides make pie.
Above photo is the actual pie I made, with a big ol’ (fresh!) whip cream smiley face.
Below is the actual recipe I ended up making. It was sort of pieced together from a couple of other recipes, with ingredients adjusted to taste and whatnot. And truly, if you wanted to go the super easy route, a premade crust and a can of whip cream would save you a few minutes as well. But before you do that, know that graham cracker crusts are the EASIEST thing to make and are 1000x better than store bought. Same with the whip cream. Two minutes with a mixer and you’ll never want canned whip cream again.
