Rotisserie Chicken from the Publix Deli.
(This is not from the Publix Deli, but let’s pretend for the purposes of this post.)
Rotisserie chicken is the lazy man’s (or woman’s) “home-cooked” meal. Saute some veggies, add a starch, and dinner is served. Or go ultra-lazy and “carb-up” with a side of mashed potatoes and some mac-n-cheese from the deli as well. (Publix Mac-N-Cheese calls to me like a siren to a sailor…)
The leftover chicken is great for continuing the simple meal theme. I’ll shred it and use it for flatbread pizzas, quick pastas, salads, sandwiches or wraps, quesadillas, etc. I find I actually eat less chicken when I shred it for pasta or salad versus having a piece of chicken with vegetables and rice… something to consider for those of you trying to cut your meat intake.
Now for the all-important questions…
White or Dark?
Skin or no skin?
(Dark with extra-crispy skin please!)
