Grab your bottle of Baileys- we’re drinking today. I’ve already started so you’ve got some catching up to do. The last few Fridays I’ve shared recipes for food. I’ve passed up food in favor of alcohol today.
Holy. Hell. Thank God this week is over! After a few sluggish post-vacation days, followed by a couple days of technical problems with my computer and camera software, this week culminated with waking up to dog poo AND pee in the sun room and a dead bunny on the back patio, courtesy of the cat. There are more details to the story, but I won’t bother you with them. Point is, this week is bordering on absurd. You know, when things just reach a point where the only response left is, “Seriously. W.T.F?” I’m convinced that I have now reached the breaking point of this crap week and things have no choice but to improve. To help things along, I’m enlisting the help of Baileys Irish Cream. Original please, none of those flavored varieties they created- yuck! All of the following recipes come from the Baileys website. Note- directions here may not follow exactly as written on their website.
2 ice cubes per person
3.5 oz. Baileys per person (or per bad day this week)
Dump it all the blender and fire away. Be careful not to overblend, as it will turn slushy instead of shivery.
Baileys Crush (for those feeling hostile)
Handful of ice cubes
Baileys (only you know how much is enough)
Wrap the ice in a dish towel, beat to all hell with rolling pin or other hard object, dump in glass and fill with Baileys.
Baileys Irish Martini
3.5 oz. Baileys
3/4 oz. Bushmill’s Original Irish Whiskey (or Johnny Walker’s Scotch Whisky)
Shot of cold, strong coffee
Pour in a shaker filled with ice. Shake it to the left, shake it to the right, and pour in a chilled martini glass.
Baileys Coffee (For those morning people or those living where it’s still cold)
Hot, steaming milk
3.5 oz. Baileys
Pour it all in a mug. Done. Ta-da. Their website indicates that a bigger coffee mug would allow for more milk, but let’s be honest, bigger mugs are for bigger slugs of Baileys!
Here’s to your weekend being better than your week was!
